Buttermilk Pancakes

Hi everyone and welcome to Blogmas DAY EIGHT! I woke up early this morning to make some delicious pancakes that go very well with peppermint coffee to get you in the spirit. The recipe I have created is adapted from All Recipes Buttermilk Pancakes and NYTimes Buttermilk Pancakes. Buttermilk Pancakes
Ingredients:
2 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoons salt
2 cups buttermilk
1/2 cup milk
Dash of vanilla extract
3 eggs
3 tablespoons of unsalted, melted butter

Step 1:
In a large mixing bowl, combine your dry ingredients. In another bowl, beat your buttermilk, regular milk, eggs, and butter until combined. The mixture will be medium thick and may have some lumps, which is okay (you don't want to overbeat the batter).
  • tip: make sure your melted butter is cool before mixing with your other wet ingredients. otherwise, the mixture could curdle. 

Step 2: 
Prepare your pan. On medium heat, allow some oil or butter to heat up in the pan. I use coconut oil, which gives a little extra flavor to the pancakes. As you wait for your pan to heat up, combine your wet and dry ingredients and mix together until everything is combined.


Step 3:
Pour batter onto the griddle and allow each side to brown. Put on a plate and cover with paper towels to keep hot while you finish the others.
